VEGAN, VEGETARIAN
You can alter the spice measurements to desired taste. I just really like cinnamon.
1 3/4 C all-purpose flour
1 (15 oz) can pumpkin
3/4-1 C firmly pack brown sugar
1/3 C butter
Ener-G egg replacer [3 tsp + 4 tbsp warm water] OR 2 large eggs
2 tsp nutmeg
1-2 tbsp cinnamon
1 tsp ginger
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
- Mix all ingredients until a batter is formed.
- Spoon batter into loaf pan.
- Preheat oven to 350 degrees Fahrenheit. Bake for about 30 minutes or until a knife is inserted and comes out clean.
- Let cool for 10 minutes on wire rack.
- Remove loaf from pan and continue to cool on wire rack.


I like cinnamon too! This looks lovely! I’d love this for breakfast! Yum!

this taste better as a leftover. the spices definitely pick up a day later.
