Calling Out of Work at the Last Minute Soup

VEGAN

I woke up this morning with a terrible migraine and I was feeling woozy. BLAH! I called out of work at the last minute and thankfully my manager was very nice about it.

I couldn’t quite eat anything but I knew I had to get something into my vegetarian belly to make me feel better. I had no canned soup and the boyfriend is out of town (can’t send him to the store). Once I finally got a little energy to get out of bed I raided my fridge and pantry and came up with this quick and DELICIOUS soup. Here are just some basics but you can alter it anyway you want.

p.s. I am trying to get better at using my digital camera.

INGREDIENTS

4 cups water
2 vegetarian buillon cubes
celery, chopped
mushrooms, chopped
onions, chopped (I only used a little)
fine noodles
lemon & pepper seasoning salt

  • Boil water; add both buillon cubes until dissolved.
  • Add chopped vegetables and stir. Allow veggies to cook at high temperature for a few minutes.

  • Bring water to medium and add seasoning.
  • Let everything cook for a few minutes. When you are ready to eat, add the noodles and continue cooking for about 4 minutes.
  • EAT & FEEL BETTER!

RECOMMENDATIONS: I was all out of carrots but they would be a great addition to this soup. I also was out of Everglades Fish & Fowl Seasoning but I love adding that to soup recipes.

I never give Rupert any of my food because he is a little food monster, but he just was going crazy for my soup today. I put a spoonful of broth diluted with water into a container and let him have at it. RUPERT APPROVED!

good post! good recipe. i love soup, b/c you can do so many different things with it. at the most basic level, throw some stuff in a pot, add water, boil a bit, enjoy, all the way to some kind of fancy crazy complicated formula.

will, isn’t it great to see a successful feral rescue (i.e. Rupert). I am sure the last time you saw Rupert was when he was a cowering, little baby in Ashley’s bathroom. Now he is 6.5 lbs of pure energy. Everyone falls in love with him who meets him. I really think Rupert wants to be a vegetarian (sorry, I am way too lazy/busy as a college student to make your amazing vegan cat food recipe; also, my company supplies me with free kitty food). I have never seen a cat go so crazy for my cooking; he is determined. I couldn’t help but give him a little of the soup.

My kitty won’t TOUCH my food. Rupert’s cute.
