“Chicken” Salad

Vegan, Raw

1 can chickpeas (drained)
1 green pepper or celery stalk-your choice (diced)
1/2 onion (diced)
mayonnaise (or vegan alternative)
salt and pepper to taste

Pour the beans in a medium bowl and mash with a potato masher until chunky. Toss in everything and stir.
